An aromatic chili paste that is used in North African cuisine. There are many regional variations, but a general recipe consists of smoked chilies, olive oil, cumin, garlic, coriander, and mint. Harissa is highly versatile; it can be used as a marinade, a spread, and as a flavoring agent in soups.
