A raw noodle made from kelp (a sea vegetable), sodium alginate (derived from brown seaweed), and salt. Kelp noodles need to be soaked for at least 10 minutes before they are eaten. They can be used in salads and as a substitute for gluten-containing noodles in pasta dishes and ramen.
