Traditionally a raw fish salad. Although very similar to a ceviche, it differs in the sauce components. In ceviche, acid from citrus juice is used to cure the fish. In poke, the fish is not always cured with acid. Plant-based poke typically contains diced watermelon or beets, with a tamari-based dressing.
