Buckwheat is actually a pseudo-grain related to the rhubarb plant. Raw buckwheat groats have had their outer husks removed to reveal a light-colored, pyramid-shaped “grain.” Buckwheat is available raw or toasted, known as kasha. I generally opt for raw buckwheat and have come to love its earthy flavor, which lends itself perfectly to baked goods and raw porridges. You can find buckwheat groats in most health food stores or online. Despite having “wheat” in its name, buckwheat is wheat- and gluten-free.
