This type of tofu is delicate and has the highest water content. It’s coagulated, like firm tofu, but is not pressed. As its name indicates, it’s silky and smooth. Silken tofu is available in soft, firm, and extra-firm but is usually reserved for blended, creamy desserts or dressings. You’ll find silken tofu sealed in an aseptic, rectangular box often on the shelf (maybe fridge) in the organic or ethnic aisles. Do not interchange regular tofu with silken tofu.
