A good olive oil, often in abundant measure, is the soul of Italian food. The rule to know is that a good olive oil is not — and should not be — cheap. Don’t save your good olive oil for a long time to be served for special occasions, as it goes rancid. Do keep it in a dark bottle, never a transparent colourless one.
