This member of the genus Brassica comes in a head and behaves more or less like a cauliflower, which can substitute for it when needed, but the taste is rather closer to broccoli. It is distinguished by its pointed fractal florets and light but vivid green. Once unknown outside the Rome area, it is now increasingly available around the world, often misnamed simply romanesco.
