Ovoli

The Amanita caesarea mushroom is one of the most highly prized mushrooms in Italy. Today an expensive gourmet item, it is almost always served raw, but back in the day when they could be gathered easily and in quantity, ovoli turned up in some surprisingly homely dishes.
