Cured (not smoked) pork belly, pancetta comes in both slab (tesa) and rolled (arrotolata) forms. Slab is somewhat preferable, but if the recipe calls for chopping the pancetta into tiny pieces, it makes no difference which type you use. Bacon, which is smoked, is not usually an acceptable substitute for pancetta.
