A mixture of honey and vinegar that was used prevalently many years ago for the preservation of hard fruits such as pears, apples, and quinces. The name comes from two Latin words—acetum, meaning “vinegar,” and mel, meaning “honey.” See also Aceto dolce and Hydromel.
