Brandy made from apple cider. Applejack varies from 80 to 100 proof. In France, apple brandy is known as Calvados, which is also the area of Normandy famous for both its apples and its cream. Apple brandy is most often used in desserts that contain apples as a primary ingredient. Deglazing sautéed apples with apple brandy, for instance, is a great way to intensify the apple flavor and add another dimension to the taste at the same time.
