An American apple with a splotchy dark red skin and excellent keeping qualities. It has tart, firm flesh, a very aromatic flavor, and is a good cooking apple to boot. York Imperials are not commonly found in grocery stores; they are mainly used in the food-processing industry. Season: Mid-fall to April.
