Blueberries grow wild in both Scandinavia and the United States. They are available fresh in the late spring and through the summer; they are also sold frozen and canned. Fresh blueberries are wonderful for adding color to fruit tarts and fruit salads. While not as desirable, frozen berries give a good result when used in muffins, tea cakes, pancakes, and other cooked products. Store or freeze blueberries as directed for blackberries. Do not thaw frozen blueberries before adding them to batters. Blueberries contain a large amount of pectin.
