Buckwheat flour is made from the roasted seeds of the plant. It does not contain any useful gluten and has somewhat less protein and starch than wheat. The flour is grayish in color, with small flecks of black and white. Buckwheat flour is used most often in pancakes, especially for the popular buckwheat blini of eastern Europe.
