Bulgar wheat is made by cooking whole wheat grains, drying them, then grinding them coarsely into a cereal. The same product is also known as cracked wheat. Bulgar wheat is often used to add substance to meatless dishes and is used in Middle Eastern salads such as tabbouleh.
