Also known as cocoa block, bitter chocolate, and baking chocolate. Unsweetened chocolate is made from cocoa paste that has been finely ground and conched; the cocoa butter content should be at least 50 percent. Unsweetened chocolate is used as a flavoring and coloring agent for fillings, marzipan, mousses, and many other products; it is not eaten plain.
