Cornmeal is made from coarsely ground dried white, yellow, or blue corn. If a recipe calls for cornmeal, the yellow variety is usually what is meant. Cornmeal is sprinkled on top of English muffins, sourdough breads, and bread sticks to give them a crunchy crust. It is also the base for cornbread and corn muffins.
