Dates are the fruit of the date palm, previously grown mostly in Iraq for commercial purposes but more recently grown in California. Dates are very sweet—almost half sugar. They are most often sold dried and are available whole or pitted. Whole dates are generally of higher quality. Dates can be stuffed with fondant or marzipan and glazed with sugar to serve on a petits fours tray. They are also used in nut breads and muffins. Fresh dates are very perishable and must be kept refrigerated, although the dried variety may be stored at room temperature if well covered. Dates have a pleasanter texture if stored in the refrigerator.
