Dry milk is produced when milk is rapidly evaporated by being forced through heated cylinders. Dry milk is usually made with skim milk, which gives it a very long shelf life and makes it an ideal substitute where it is impractical or impossible to get the fresh product. It is also used, in some instances, purely for the sake of convenience.
