A strong, clear brandy or other fragrant liqueur distilled from fermented fruit juice. It is made by distillers in the Alsace region of France, with a proof level ranging from 80 to 90. The term is French for “water of life.” Two of the most popular varieties are kirsch (distilled from cherries) and framboise (distilled from raspberries). Eau-de-vie is used to lend flavor to a variety of desserts, pastries, and candies.
