Shelled frozen eggs are an excellent substitute for fresh and are very convenient to use. Thaw them slowly in the refrigerator one or two days before you plan to use them (although you can place them under cold running water to thaw in an emergency). Frozen egg whites and yolks can be purchased separately. It is important to stir any thawed egg product thoroughly before using it.
