Egg wash is made from whole eggs, egg yolks, or (less often) egg whites, beaten together with milk, cream, or water. Egg wash is brushed on top of breads or pastry products before baking to enhance browning. Egg wash is also used as a glue to hold toppings in place—sliced almonds or poppy seeds, for example.
