Unsaturated fat

Unsaturated fats are derived from plants and remain liquid at room temperature (approximately 70°F/21°C). The most common exception is coconut oil, which is a saturated fat of plant origin that remains solid at room temperature. Unsaturated fats are further broken down into the subcategories of monounsaturated and polyunsaturated fats, both of which are thought to reduce cholesterol in the blood.
