An herb (Trigonella foenumgraecum) native to Asia and southern Europe. Its bittersweet seeds are sold whole and ground. Fenugreek is used in Indian and Persian cooking—specifically in the preparation of spice blends and teas. Ground fenugreek seeds are also used to produce an artificial maple syrup flavor for candies and ice cream.
