A Spanish dry cocktail sherry. Fino is usually pungent, with a medium body and pale gold coloring. Considered by many to be the world’s finest sherry, it is best served when young, as it does not age well. In addition to being served as an apéritif, sherries are used in the pastry kitchen to moisten cake layers and flavor sauces.
