Also known as graham flour, whole wheat flour is milled from the entire wheat kernel, including the germ and the bran; for this reason, it is very nutritious. Whole wheat flour does not keep as long as white flour because of the fat contained in the wheat germ. Bread made from whole wheat flour is heavier than bread made with white flour, so most of the time, a combination is used. Whole wheat bread dough takes less time to knead than bread made with white flour.
