Gram flour

A pale straw-colored flour produced from ground dried chickpeas. It is a nutritious, high-protein flour that is mainly used in East Indian cooking for dough, dumplings, noodles, as a sauce thickener, and to make a batter for deep-frying. Also known as besan.
