Similar to gum tragacanth. This substance is produced from the bark of various species of the acacia tree (the most common is the Senegal variety) and is used as a jelling agent in a variety of confections. It is also used as an emulsifier, stabilizer, and thickener in many processed foods such as ice cream, candy, sweet syrups, and commercial sauces. It is tasteless, colorless, and odorless.
