A large black olive from Kalamata, Greece. It is dark blackish-purple in color, almond shaped, and about 1 inch (2.5 cm) in length. It has a strong, rich flavor and is sold whole or pitted; however, the olives are commonly pitted before marinating in olive oil and wine vinegar. Kalamata olives are delightful baked into bread. Also spelled Calamata.
