A variety of wheat. The name derives from the ancient Egyptian word for “wheat.” Kamut is considered one of the oldest types of grain. Grown commercially only in the state of Montana, this high-protein, nutritious wheat has never been crossbred and remains in its original variety. Kamut has a slightly nutty flavor and is used in the United States in processed foods such as pastas, cereals, and crackers. Due to its limited cultivation, products made with kamut can be difficult to find.
