Limes are a member of the citrus family closely related to lemons. Limes are not used as extensively but can be substituted for lemons in many cases. They turn from green to yellow when fully ripe; however, immature green limes are the ones that have the desirable tart juice and, because of its bright green color, lime zest is often used as a garnish. Unlike lemons, limes should always be kept refrigerated; they will keep this way for up to six weeks.
