A sweet, creamy, thick spread with a buttery flavor, made from maple syrup. The basic procedure calls for heating the syrup, cooling it over ice water, then beating it with a wooden spoon until the consistency thickens. The process is similar to making fudge or fondant; the mixture turns opaque and thickens as the sugar crystallizes.
