Palm sugar

Also called jaggery, palm sugar is made from the sap of the Palmyra palm tree. It is an unrefined brown sugar with a coarse texture that is sold in lumps or cakes. Typically, palm sugar is called for in Indian, southeast Asian, and Indonesian recipes.
