Black peppercorn

Black peppercorns are picked when the berries are almost but not quite ripe. They are then dried until the skin shrivels and turns dark brown to black. Black pepper has the strongest flavor and is usually what is meant when one simply speaks of pepper in the kitchen. Because it loses its flavor rather quickly once it is ground, black pepper should always be freshly ground as needed.
