Rice flour is prepared from broken rice grains and is used as a thickening agent. It does not contain any gluten and is therefore not used for baking bread. Glutinous rice flour, also known as sweet rice flour, is made from short-grain rice with a high starch content. It is used in Asian cooking as a thickening agent and to make the dough for some types of dumpling wrapper.
