A thick, sweet, slightly caramel-flavored milk product made from sweetened whole milk from which 60 percent of the water has been evaporated. Gail Borden invented sweetened condensed milk in 1853. Borden (1801–1874) was an American dairyman, surveyor, and inventor. In 1856, he also patented the process of evaporating milk, and the Borden Milk Company (now the Borden Family of Companies, including Borden Foods Corp, and Borden Chemicals, Inc.) continues to be an economic giant in the business industry. Sweetened condensed milk cannot be used as a substitute for evaporated milk because of the added sugar. However, it is also known simply as condensed milk, which can lead to confusion.
