Also known as cassava, the yuca is a root native to South America, although now primarily imported from Africa. The root can range from 6 to 12 inches (15 to 30 cm) in length and 2 to 3 inches (5 to 7.5 cm) in diameter. When its tough, brown skin is peeled, a white, crisp flesh is revealed. The bitter form of this root is poisonous unless cooked, unlike the sweet version, which is used to make tapioca. Yuca should be stored in the refrigerator and for no more than four days.
