A commercial machine that was once indispensable in the bakeshop and still has many uses. It consists of two marble or granite rollers that turn at a low speed to prevent a buildup of heat from friction. The distance between the rollers can be adjusted as desired. An almond mill can grind almonds as fine as flour, and its main function in the past was making almond paste by grinding almonds and sugar together. It is also useful for softening marzipan or almond paste that has dried or formed a crust, and to produce bread crumbs.
