Also known as a canellé knife, lemon decorator, lemon stripper, mushroom fluter, and citrus decorator. This tool is looks very similar to a citrus stripper, and many people use them interchangeably or do not seem to realize there is any difference between the two. However, the channel knife has a V-shaped cutting notch positioned at the end of the blade, whereas a citrus stripper has a rounded notch positioned on the side of the blade. A channel knife is designed as a decorating tool. It cuts deep strips of rind, including much more of the white pith than is removed with a citrus stripper. A channel knife is used to carve decorative lines in citrus fruits and cucumbers before they are sliced to give the slices a fluted edge.
