A stencil made of stainless steel or plastic that is used for creating decorative sponge sheets. These thin, flat sheets measure approximately 23 × 15 inches (57.5 × 37.5 cm) and are designed to just cover a full-size Silpat. The grills are available in many patterns. The grill is placed on top of a Silpat, then tuile decorating paste is spread over it in a thin, uniform layer, filling in the pattern. The grill is removed, cake batter is spread over the tuile paste design, and the sheet is baked. The grills should be handled and stored with care to avoid bending them. If they become misshapen and do not lie perfectly flat, it will be difficult to create a pattern with precise edges.
