This is the most convenient and efficient type of scale to use. It uses a spring mechanism like the spring scale but has a digital readout that can be zeroed. This allows you to weigh one ingredient on top of another without adding the measurements together, or to compensate for the weight of a container by placing the empty container on the scale, setting the readout back to zero, then adding the product to be weighed. Electronic scales are by far the most expensive of the three types discussed here, but they pay off in the long run by contributing to efficiency and reducing human error.
