Also called baker’s helper and dough scraper. A hand tool designed for cleaning and scraping the surface of a wooden workbench in the kitchen where doughs are rolled out and formed. Bench scrapers consist of a thin, rectangular stainless-steel blade, approximately 6 inches (15 cm) wide by 4 inches (10 cm) tall, with a wooden or plastic handle; they can also be made from a solid piece of stainless steel, with one long edge rolled to form the handle. In addition to being used to clean the top of a worktable, they are used for cutting and portioning dough, cutting baked goods, such as cookies, into pieces, and can be used like a spatula to transfer items.
