A tool used to aerate (add air to) flour and/or other dry ingredients such as cornstarch, powdered sugar, and cocoa powder. Sifting is also done to remove or break up lumps in the dry ingredient, and may also be done to combine two or more dry ingredients evenly. Sifters come in many sizes. Often, a strainer is used for the same purpose.
