Referred to in this text by the brand name Silpat. This is a nonstick pan liner made from glass fabric covered with food-grade silicone. Silpats are made in sizes that fit full- or half-sheet pans and are used instead of baking paper or greasing and flouring the pan. These thin (approximately ⅛ inch/3 mm) soft, flexible sheets are able to withstand temperatures from –40° to 480°F(–40° to 250°C) and can be reused thousands of times. Silicone mats are also used for sugar work because they can tolerate high temperatures and do not need to be greased or oiled. Silicone mats should be washed using a soft, nonabrasive sponge or cloth and hot water or just wiped clean. See Flexipan.
