Silicone baking mat

Referred to in this text by the brand name Silpat. This is a nonstick pan liner made from glass fabric covered with food-grade silicone. Silpats are made in sizes that fit full- or half-sheet pans and are used instead of baking paper or greasing and flouring the pan. These thin (approximately ⅛ inch/3 mm) soft, flexible sheets are able to withstand temperatures from –40° to 480°F(–40° to 250°C) and can be reused thousands of times. Silicone mats are also used for sugar work because they can tolerate high temperatures and do not need to be greased or oiled.
