Silpain

The brand name of a baking mat made especially for baking bread. It has the same nonstick properties discussed under Silicone baking mat but is made with an open mesh for better air circulation and with a dark-colored surface to enhance browning. Silpain mats are made by the Demarle Company, which also makes Silpat and Flexipans.
