Elongated spatula also known as icing spatula and palette knife. These spatulas have stainless-steel, wood, or plastic handles and stainless-steel blades in lengths from 4 to 14 inches (10 to 35 cm); the width of the blade generally increases in proportion to the length. The blade is always a long rectangular shape with a rounded tip. The most practical size for everyday use has a 10-inch (25-cm) blade that is 1½ inches (3.7 cm) wide. Flexible spatulas have a multitude of uses in the pastry kitchen, including applying icings, glazes, and buttercream; spreading batters or melted chocolate into sheets and/or within templates; and moving cake layers.
