Offset spatulas are like plain flexible spatulas except that the blade is bent at almost a 90-degree angle about 2 inches (5 cm) from the handle, then bent again to become parallel to the handle. The advantage to this shape is that it allows you to spread a product very thin without the edge of the baking pan, the handle of the spatula, or your hand getting in the way. Offset flexible spatulas are also known as gooseneck spatulas, offset icing spatulas, and offset palette knives. Offset flexible spatulas are made with blades that range in size from 3½-inch (8.7-cm) blades to 10-inch (25-cm) blades.
