Triangular spatulas look like putty knives. They have rigid triangular blades with the wide edge in front and the tapered end attached to the handle. The blades are stainless or forged steel, and the handles are usually made of a rubber or plastic composite for a nonslip grip. The width of the blade is between 1 and 4 inches (2.5 to 10 cm). Triangular spatulas are used for scraping a pool of chocolate together in one form of chocolate tempering, for lifting and scraping boiled sugar or fondant as it cools, and for making chocolate ruffles and chocolate cigarettes.
