Sugar warming case

A large box with solid top and bottom and transparent panels on the back, left, and right sides, leaving the front open. The top of the box accommodates a sugar lamp; a removable elevated work surface fits inside the base. The box is used for the procedures described under sugar lamp. The case is large enough that the chef can work on the sugar with his or her hands inside the box, protecting the sugar from air drafts and foreign particles.
