An accurate thermometer is an invaluable tool in the professional kitchen. Thermometers are essential for certain types of food preparation—checking the temperature of bread dough, tempering chocolate, and cooking sugar are examples in the pastry kitchen. They are equally important when it comes to food safety and sanitation. To this end, they are used to test the temperature of raw and cooked food products in storage units and the temperature of food that has been removed from storage to be served from the kitchen or on a buffet table. Thermometers are also necessary to check that equipment such refrigerators, freezers, and dishwashers are operating at the proper temperature.
